what i did wrong!

Um, so I totally failed the Babycakes cookbook recipe for Banana Bread. I was seriously mad! I can't stand it when I screw up recipes for gluten free baked goods because the ingredients are so expensive.
I'm not really sure what I did wrong but it was "spongy" in texture and doughy in taste. Humm what to do?!

Salad Girl


Top 5 reasons I love salad!
1. The nutritional value is incomparable!
2. The color, I enjoy vibrant meals :)
3. Flavor, flavor flavor...they don't have to be boring!

5. It's hard not to make a gluten free salad!



So tonight I experimented with a new salad dressing that I have not tried. Drew's Natural Smoked Tomato. I really like garlic and this had a hint of it. First I marinated a chicken breast in it. I baked the chicken in foil because I don't have a grill. I wish I did, but I don't. I think it would have tasted better. I whipped up my favorite veggies I had lying around and after the chicken cooled, added it to the top and ta da!
I think I may try this dressing in a cold rice pasta salad too, that would be really good. The nice thing about the Drew dressing is the fact that there is no added sugar and it's gluten free.

♥Pumpkin Muffins!


Pumpkin Spice Muffins from *BABYCAKES*
Very good, not too sweet, but they are healthy! Approx 220 cals for a jumbo one, (I made smaller ones, 175 cal). It's a lot but imagine going to Starbucks for a 470 cal guilt filled treat! Plus I doubt that is as all natural as these babies!

I made these fabulous sugar cookies the other day! They are seriously delicious. I like them better than my old recipe. Plus they are Gluten Free...um, enough said! :)
One thing that I would recommend is to defiantly chill the dough before you roll it out. (I chilled in in the fridge overnight) Also when rolling out the dough I didn't even flour my workspace or rolling pin. (I forgot!) But I found that I didn't even need to, so that was kinda nice. I have not frosted them b/c I want to find a fabulous Gluten Free frosting, and I want to frost them right before I eat/serve them.
I have kept mine in a zip lock in the freezer and they have kept just fine.
